Traditional Cheese Company (TCC) was founded in 1985 by Eugene Carr, a pioneer in the Irish cheese industry. With years of experience at the Irish Dairy Board, he played a key role in shaping Ireland’s cheese market, developing the Cheddar grading system in 1979—a method still used today. As the Irish Farmhouse Cheese movement gained momentum in the mid 1980s, Eugene saw an opportunity to help small cheesemakers bring their products to market, leading him to establish TCC as an independent specialist wholesaler.  

TCC quickly became a vital link between Irish cheesemakers and consumers. Eugene worked closely with producers, offering guidance on product development and market opportunities. In the 1990s, as pizza culture grew in Ireland, he used his European contacts to introduce grated mozzarella to the market, solidifying TCC’s role as a key supplier for the foodservice industry. In 1999, TCC partnered with Superquinn and eight Irish producers to launch Ireland’s first top-tier private label cheese range, setting a new benchmark for quality and consistency.

Managing Director Gráinne joined Traditional Cheese Company in 1985 and worked in various roles across the business before being appointed Managing Director in 2017. She oversees the day-to-day running of the company and leads the sourcing and selection of speciality cheeses from across Europe. Gráinne regularly grades cheese to ensure each product meets TCC’s strict standards for taste, texture and flavour profile, guaranteeing consistency in quality for our customers. With over 30 years of experience judging at international cheese and food awards, Gráinne brings deep expertise and passion for excellence in the dairy industry.

He is responsible for the financial management, accounting, and control functions within the business, ensuring sound financial governance and stability. Des also oversees the HR function within TCC, supporting the company’s growth and people strategy. Purchasing Director Diarmuid joined Traditional Cheese Company in 2005, bringing extensive experience from the food and retail industry. Holding a First-Class Honours Degree in Business & Purchasing and a First-Class NSC in Lean Supply Chain Management, Diarmuid oversees Purchasing, Warehousing, Distribution and Quality. He focuses on sourcing new products and suppliers, while building strong partnerships to ensure the best cheeses reach customers in Ireland and internationally. Diarmuid also leads the Technical Department, with TCC proudly maintaining a BRC Grade AA+ for Food Safety.

Sales Director Derek joined Traditional Cheese Company in 2002 following 13 years with Superquinn, Ireland’s leading premium retailer at the time. Appointed Sales Director in 2013, he works closely with the Sales Managers and Specialists within TCC to deliver quality products tailored to customer needs. Derek’s focus is on product selection, innovation, and customer collaboration, ensuring TCC consistently offers premium cheeses backed by expert advice, practical solutions, and strong customer partnerships that drive shared success.

Director Julian has been with Traditional Cheese Company full-time since 2002, having previously worked part-time across several departments through his school and college years. Appointed Systems Manager in 2010, he managed IT and communications and introduced TCC’s Live Stock and Batch Tracking system, enhancing traceability and efficiency. Julian now works closely with Gráinne on the day-to-day running of the business, contributing to strategic development and continuing his progression within the family company.

The team still uses the company’s traditional grading system to assess Irish Cheddar, ensuring the highest quality. Gráinne is widely respected in the industry and serves as a judge at major international cheese awards, reinforcing TCC’s reputation for expertise.  

With state-of-the-art production facilities, TCC now supplies specialty cheeses to retailers, foodservice providers, and manufacturers across Ireland and beyond. Despite its growth, the company remains committed to the same values that Eugene established—quality, innovation, and a passion for great cheese.
